Description“You will not do incredible things without an incredible dream” – John Eliot , Fellow of The Trinity CollegeThe Role As Bar Manager, you will lead the food and beverage bar team in delivering exceptional and memorable experiences for our guests. You will take ownership of the hotel’s beverage experience, with a primary focus on Folio Bar & Kitchen and The Sage of Cambridge-a unique dual-concept venue that operates as a café by day and transforms into a wine and aperitifs bar by night. In this role, you’ll be responsible for curating innovative drink menus and experiences, as well as recruiting, training, and developing a talented team of bartenders across the hotel.The Person You are a creative visionary with a genuine passion for mixology and the world of beverages. From overseeing the beverage experience of the food & beverage outlets, to the running of pop-up events, you will be creating services and products to challenge the status quo and become a landmark in Cambridge hospitality. As a hands-on, approachable, and inspiring leader, you will guide and train the hotel’s bartending team, bringing your innovative creations to life with excellence and consistency. With a strong focus on optimizing KPIs and driving continuous improvement, you’ll craft unforgettable recipes, define new bar trends, and play a key role in establishing the hotel as a go-to destination for exceptional drinks and standout experiencesKey responsibilities As a Bar Manager, you will:
- Develop and coordinate of the beverage experience throughout all the Food & Beverage Outlets of The Fellows House: the Folio Bar & Kitchen, The Sage of Cambridge (dual concept: Café by day, Wine/Aperitifs Bar by night), pop-up event. Report directly to the F&B Director.
- Lead potential Cocktail masterclasses within the community
- Develop experiential services which are innovative and set a trend in the Cambridge’s bar scene
- Craft original beverage menu items and designing new, innovative cocktails using natural ingredients
- Ensure cleanliness and tidiness of the bars through effective checklists and monitoring of spaces
- Evaluate guest satisfaction levels, monitor trends and react promptly to improve performance of the bars experience
- Build strong relations with guests to ensure loyalty to the venues; entertain guests while mixing drinks, talking to customers about spirits and offering trivia and history about various alcohols to keep customers engaged and enjoying themselves.
- Communicate effectively with beverage-related suppliers to ensure adequate stock levels and partnerships for pop-up events
- Ensure correct purchasing and delivery of beverage-related goods.
- Maintain stock levels of alcoholic and other beverages and controlling the beverage costs through appropriate recipes making, pricing strategy, spillage and spoilage control, pouring standards and correct training of staff.
- Ensure preservation of glassware, barware and cocktailware and sensitive handling of equipment
- Adhere to the UK’s alcohol law, as well as health and safety standards
- Work behind the bar along with the bartending team to deliver the best cocktails and drinks as well as an entertaining bar experience to our guests
- Monitor both the productivity and qualitative work produce of the bartenders. Be responsible of bartenders training plan, skills development and continuous improvement.
- Ensure team members have an up-to-date knowledge of all the beverage menus and service standards.
- Develop and implement cost saving and profit enhancing measures within own area.
- Interview, select, train, supervise, counsel and manage bartenders for the efficient operation of the outlets.
- Organize efficient communication with bartending team as well as other restaurants’ staff.
- Work along-side The Folio Bar & Kitchen’s restaurant manager and The Sage of Cambridge Head Barista for all activities related to the outlets.
- Ensure competent and efficient delivery of Hilton Honors loyalty programme and ensure full compliance.
- Work alongside the F&B Director for the development and implementation of a dynamic commercial strategy to drive beverage sale.
- Assist in maintaining a Social Media and online presence of the outlets – focussed on live, dynamic content in line with branding guidelines.
- Co-lead the organization of pop-up events in the hotel’s spaces.
- Take responsibility of upselling schemes and promotional calendar
- Be an active part of the F&B Management Team and help other areas of F&B when needed.
Core requirements:
- UK citizen or valid work permit
- Proficient numeracy and literacy skills
- Passion for beverage and a creative flair
- Expectational cocktail knowledge is must
- Other beverage knowledge is preferred – wine and spirits
- Extensive experience in a wet lead/cocktail’s environment
- Willingness to create innovative and experiential beverage concepts
- Salesmanship: charismatic and effective communication with guests
- Commercial acumen
